The Food Structure Safety Research Lab (FSS) dedicates itself to creating sustainable solutions for the food industry. Our research focuses on harnessing natural biopolymers such as starch, alginate, and proteins to design innovative food structures, enhance nutritional functionality, and promote human health. We employ advanced technologies such as cold plasma, superheated steam, and ultrasound to enhance the functionality of biopolymers. Applications of our work include developing foods for dysphagia management, creating plant-based meat analogues, and developing advanced oral drug delivery systems.
